Depending on where the coffee is from and what crops it was grown around will determine the taste and flavor of your coffee. I encourage you to try different roasts and brands to find your favorite flavor. When purchasing coffee remember to look for 100% Arabica bean. The importance of this is how the beans are cultivated. Arabica bean is grown above elevation in a clean environment which effects the quality of the coffee. You can use any type of roast (Blonde Roast, Medium Roast, Dark Roast and Espresso Beans) All you need to do is grind them up properly. The way to grind up your beans for espresso is: fine. Pour grounds into the portafilter loosely. Next, use the tamper to pack in the grounds tightly. After, insert portafilter into the machine. Press brewing button and watch your espresso develop. Watch this video for more information: How to make the perfect espresso and Espresso Theory

Once you have mastered espresso making you're now ready to add the milk portion of a latte. To froth milk you will need a steam wand and your choice of milk.
YOU DO NOT WANT BIG BUBBLES. You'll know your doing well if your steam wand is making soft hissing noises.
